Smoked scotch eggs

I've seen these before here or elsewhere! I had one the otherday and keep telling my pal to smoke some wrapped in bacon but he thinks I'm crazy. So I made my own boiled the eggs wrapped with half a slice of cheese wrapped sausage around the egg then bacon around that put some rub on and smoked over pecan.

That egg looks great.  I've always loved scotch eggs, but hadn't thought about wrapping them in bacon and smoking.  Seems to be a real good idea.

I'm thinking of not hard boiling if I do it again aiming for a slightly runny yolk which would put them over the top IMHO. But the leftovers will be great for breakfast!
