Smoked Sausage Balls with Blue & Gold Sausage

We had a 2 1/2 lbs chub of Blue & Gold breakfast sausage thawed out and I wanted to do something I hadn't done before - down the Youtube, TikTok, Instagram, & endless recipes for smoked sausage balls rabbit hole I go ................

For this round I used:
1/2 a chub of Blue & Gold sausage (about 1 1/4 lbs)
2 cups of Bisquick
2 cups of freshly shredded Colby Jack cheese
1 x 8 oz of softened cream cheese
1 large Jalapeño diced with seeds removed
TBS onion powder
TBS Heath Riles Honey Rub
NFL Football on TV (Optional of course - Go Cowboys!)

Next time I'm gonna use a bigger bowl - this was the PITA part :emoji_laughing:

Pinch, Roll and load onto the rack - When they suggest using a grease pan or parchment paper, I suggest following that part. I didn't and I wished I had but it didn't affect the flavor or the end product for this cook.
Into the Yoder @ 350° with LJ Pecan Blend pellets.

The open small rack was done in about 40 minutes and I let the foil covered rack go about 50 minutes.
Small rack sure had the look I was wanting.

These were good! That Blue & Gold sausage recipe has a sage flavor and the grind is larger than most breakfast sausage I've had. Works really well with this recipe and flavor combo. Nice kiss of the smoke flavor and if you wish for more smoke you could smoke the cream cheese before adding it to the recipe. The jalapeños really gave it good flavor and color with no heat. If you like a little spice I'd suggest adding a little Red Pepper flake to this recipe. I wish I had but they were delicious even without the heat.

I will be adding these to the holiday snack list for our annual Christmas shin-dig!
