I'm new to the smoking world, just picked up my smoking champ on Friday. I made some brats and burgers and some el cheapo steaks saturday after seasoning which turned out ok. Picked up a maverick gauge today and threw on some ribeyes. (I also brought the chimney to grate level today)


Tried to keep the temp around 240 wit some hickory smoke. Cooked up to 130 and threw them over the coals for I minute or less. A couple flared up and charred a bit. But I'm not complaining as a newbie to the whole smoking thing. I'm sure I did plenty wrong but they turned out pretty damn tasty
 
Smoking and then searing them is a the way to go.  Low temp gives them time to get smokey flavor and then the hot sear gives them that texture we all love.  That's often referred to as the reverse sear.
 
I don't know if it's my 'Puter, or what, but I can't open that Picture.

I even got an email from my wife saying "those steaks were really good" I've got Wednesday off and a roast in the fridge :) time to figure that out
 
I don't know what's wrong with your pooter, Bear, but you're missing a great pic. Those rib eyes look awesome.
