An old friend of mine recently started smoking his red beans and rice and swears by it. That's all I need to hear to give this one a go!

Here are all of the ingredients minus the hot sauce and beans. I didn't have a ham shank on hand so I'm just chopping some leftover ham and adding a leftover ham bone that we had in the freezer.

Hot sauce and beans of course - beans soaked about 18 hours.

Beans were hard boiled for 20 minutes before moving on to the smoker - skimmed the gray foam from the top.

Ribs making an appearance rubbed with Twist'd Q Sweet Heat - has been in the pantry so might as well use it.
