Picked up a couple whole pork loins at Costco a couple weeks ago to cure and smoke for Canadian Bacon. Was wanting to try the electric smoker I had built over the winter and see how it works. The loins came out great. The smoker worked good but I am going to probably make a couple changes to the smoker a little later on.

Looks awesome! I have a couple huge ones in the freezer for some Asian pork jerky at some point.

Yup, very well done!

Those look great. I've been meaning to try curing my own Canadian bacon, the slices look like they came out perfectly. How long did you let the loins cure before smoking?

I usually cure 6-8 days on loins. It's a pretty easy process sometimes I use the smoker in the picture sometimes I use a pellet smoker.
