Thank you yes 135 is they way to go of course ends where 140-145 but that’s the way it goes still good!

I have three 2 pound chunks brining as we speak.

I am thinking that at 225F they may take about 3-4 hours to smoke to hit about 140F.

Would you agree or think they will take less time?

This is my first pork loin smoke and I'm experimenting with the size I can cut to and how long it will take.
If I can get three 2 pound chunks (6 pounds total) done in 3 hours applying double smoke with the AMNPS then I might have a nice go to that I can plan at 8am and have ready for noon lunch or plan at lunch and have ready for dinner.

That is kind of my goal. The other 4 pounds (of a 10 pound loin) have been consumed as grilled chops throughout the week :D
