Smoked Pork………………..

Made some street corn to go with. Fresh cut off the cob then sautéed in butter with green onion and fresh garlic.

Deglaze with a little bit of white wine

Then add cotija cheese , a mayo and lime dressing and a bit of cilantro.

Some diced roasted green chilies. And that pork belly was bomb. Very tender. Much like pork as brisket. Very delicious.

I tried smoked belly a few years back. It was too fatty & rich for me. I've seldom found one lean enough to try again.

I've done 1 pork belly smoked like this, all the rest I smoked were bacon.
I've also oven roasted and grilled some pork belly.

What I found is that I liked the grilled and oven roasted way more than plain smoked because it got crispy with that fat and other bits and was awesome!
My smoked belly had good flavor and all of that but was just different and not as great (to me) compared to the crispy and tender alternative.

it's been on my mind to low temp smoke some pork belly and then transfer to a propane grill and cook to get that nice crispiness and tenderness along with the smoke flavor. Best of all worlds maybe :D

I can see that. I’m going to pan sear a few pieces just for flavor. Thanks a bunch.
 
So I fried a couple slices in a med high skillet to get some sear. This made the flavor go another level good. This is the way I’ll plan it in the future.
