Smoked Plate Rib, Wild Rice, Brussel Sprout, and Red Currant Dinner!

How it came to be:
Found another Costco score .....some very marbled plate ribs last week. I have been passing up these double pack of ribs because it was too much for one meal and didn't really want to add to the freezer but came up with a way to "hold" it without a freezing.... Ie had some dry age bags in the BBQ drawer so bingo.... a way to hold it fresh for a couple of weeks.... also dry aged the fully fat capped one so less trimming when I pull the back out a few weeks...

Check out the marbling.....I couldn't pass these up when I saw them!

close up! Man oh man!

Marbling of the ribs going in the smoker
IMG_4623.jpeg

close up....this is marbled to the A5 level....
IMG_4627.jpeg

Bingo the fridge 2-4 week hold..... ie when every we have a desire for ribs gonna pull it!

The weekend meal got coated in my 5-spice butter rub
IMG_4630.jpeg

just a pic of the RFX probes...... Just a side note that I have discovered a why I think many people are having connection issues with these. If they get inserted beyond the dark bar, then the connectivity drops to poor and will easily lose connection. If you have them installed as noted below, then you get a solid connection! However, you need to keep an eye on them because as the ribs shrinks the probe will stick out further so you will want to adjust them mid cook.

on the RT 1600 at 265 with a drip pan underneath.... I am LOVING the 1600 and all the vertical space for the drip pan setup!

Oh so the X-Fire grill always has a job to do when smoking. This location is perfect for the gateway for the probe connectivity and the Wi-Fi to the house so this is a two smoker cook....lol
IMG_4634.jpeg

5 hours in.....INT is 180 so time to wrap!
IMG_4636.jpeg

Pulled them at 198-200 INT and meat jello.....reasted in the oven for 60 mins while the sides were in the works....
IMG_4638.jpeg

I think you can call this fall off the bone.....LOL
IMG_4639.jpeg

sans dino bones......ready to slice
IMG_4640.jpeg

since sans ribs just sliced it like brisket......note I did NOT dress this with the rendered tallow as I normally do because the marbling was more than enough!!!
IMG_4641.jpeg

Trimmed up the slices to have 100% perfect bite pieces then added some wild rice, pan seared brussels then topped it all with Mrs Cs red currant balsamic reduction! Holy crap this was crazy good!
IMG_4642.jpeg

Just a shot of the "set" dry aged rack #2....man these are going to be tasty in another week or two!

till next time :-)

You are knocking it out of the park with these posts! Keep up the good work.

Dang! I'm envious of not only your cooks, but also your Costco. Never seen plate ribs (or picanha, from your other recent cook) at a Costco.
Thanks, SCBBQ! the picanha is a new thing they just started having. I think it will be a short term fall thing, but I hope not. Our Costco's only starting stocking the plate ribs in like 2 years ago, the have lots of short rib cuts but they then started putting the "double" packs in, this last time they had single packs to the mix but this double marbling spoke to me! I have gotten them a couple of times, but I always look for a marbled one and only get those!

Looks awesome! The marbling is nsane!
Thanks jcam, yea the marbling was screaming at me when I saw them! My shopping approach for beef is marbling first!
Hell Yeah!
Oh yes, thanks chiler!
Wow just Wow! Home rub there!
much appreciated Brian, plate ribs are a easy short cook, but you get a perfect brisket bite out of it!
I certainly believe that. Atta boy Civil!
thanks Colin!

Great looking Dino ribs. Job well done. I'll need to try the red current jelly on the Brussels sprouts. It would be a nice change of pace.

True inspiration. Made me remember to start looking for a house on your block and about the plate ribs I have in the freezer. They are going on the smoker tomorrow. Will dry brine overnight. Tell us more about this butter rub. It sounds really good for beef. Do you like smoking the ribs whole or individually better?

Many thanks Jim and yea the red currant goes very well with the BS! It’s like the “cherry” on top!
Great looking plate and it all sounds good except for the baby cabbages, But I would inhale the rest .

David

Thanks ifits!

I have done both whole and short individuals, love the both! So no preference just what’s available!

This is the rub I’ve been working on…..I haven’t verify these exact ratios but here is the pretty close recipe…..note the sugar in the raw really helps with caramelization of the bark

Test Ratios
1 Cup powdered Butter
3/4 Cup Paprika
1/2 cup Onion Powder
1/4 Cup Powdered garlic
1/2 TSP Black Powder
1/4 TSP Red Pepper Powder
1/4 TSP Powders (each beef, chicken, mushroom)
1 - 1/2 TBSP sugar in the Raw
1 TBSP Chinese Five Spice

This rub helps mitigate the fatty richness of brisket and the ribs. It also goes with many sauces, it kinda universal.
