Smoked my first venison tenderloins

I'M OFFICIALLY HOOKED!!! Today was my first time smoking meat….

I just took a couple of my test pieces of venison tenderloin off the grill and they are fantastic!! I can't wait to do more and experiment and learn!! 

Here is what I did:

I soaked the pieces in a brine for a day

* 1 gallon water

* 3/4 cup of salt

* 1/2 cup of soy sauce

* 1/4 Worcestershire sauce

* 1/2 cup brown sugar

* 1/2 cup molasses

* 1 tbsp rosemary

* pepper to taste

I rinsed the venison after it brined

Then I rubbed it on one side with Jeff's Rub and wrapped it in bacon

Smoked it just below 250 until the temp was at 140 degrees using a mixture of apple and Jack Daniels chips 
 
Next time I will be sure to post some pictures - we ate it ALL last night :) It was yummy!
