Smoked meatloaf

Smoked a meatloaf this afternoon. Used a recipe from Michael Symon. There are three twists to it: 1. Saute the vegies first before incrporating them into the meat. 2. After putting 1/2 the meat in the pan, put down a layer of meltable cheese. We used provolone. Put the rest of the meat mix on top and smoke as you would before. 3. One-half hr before it's done, put a layer of the same cheese on top and finish smoking. Certainly a cheesey meatloaf and sauteeing the veggies enhanced their flavour. Will do again. I smoked a potatoes as well or smokintator as we call'm!

You hit a home run!
Don't make meatloaf much anymore.
Always saute my veggies and chill before mixing in the meat.
The middle layer of cheese is something I never tried.
