One of our favorite Youtube channels to watch is Cowboy Kent Rollins. One of his recipes graced our grill and plates recently is smoked meatloaf. (Minus the peppers)

It took a bit over 2 hours, I forgot to tell my wife that the work needed to be weighed out because it was more than the recipe called for. I cooked it to temp on indirect, so I wasn't sure exactly what the temp was.
 
Thanks for sharing. I wondered what had happened to him after he lost on a few cooking championships.

He does the videos and also opened a coffee shop in N. Texas that specializes in cowboy coffee.
 
Will have to check that out. Meatloaf was my one of my wife's secret weapons to get me to fall for her when I swore off love post divorce.

The one lesson I learned doing it as Kent does is do NOT use cast iron or any pan to catch the drippings. I had to use a sander to get the baste off my pan afterwards.

We used the Fire and Smoke (Walmart) Tangy Mustard sauce in the mix and will likely use it again as a binding agent for some home make version of Kent Rollins Red River Ranch seasoning.

Smoked meatloaf is the best but if you only have a gasser it will cook better meatloafs than an oven will. Put it up on the warming rack and cook slowly.

Nice. Looks like you did the Saran Wrap trick. I wish I had done that over the weekend but was not that energetic LOL.
 
Dinner is served Kosmos style!

I have to say that this was the best meatloaf I have had in a long time.

Smoked it in the electric smoker at 250 degrees for around three hours.

Tried it without the sauce for now (still needing monkfruit for home made sauce)
