Smoked meatloaf Saturday

For the non-smoked version, I add 1/4 cup A1 steak sauce into the mix and I brush the top with the Chicago Steakhouse marinade because it's more of a tangy peppery tomato flavor...and i dislike ketchup. Since I smoked this one, I brushed a sweeter BBQ sauce on top thinking it would compliment the smoke better.

Trying something very close to your recipe for my first smoked meatloaf right now. Only change I made is about 1lb each of ground beef, pork, and veal. Also, I didn't notice that I was supposed to saute the peppers and onion until it was too late, so i may have a bit of crunch there. Looking forward to tasting this tonight!
 
Must be a Saturday thing. We smoked two meat loaves yesterday - one for eating and one for freezing. Recipe used ground beef, some mild Italian sausage and a bit of chorizo along with the other usual suspects. Wife glazed it with a BBQ type sauce that she just made up on the spot (she's good at that kind of thing). Smoked it on mesquite. Delish.

You really can’t go wrong with any meatloaf recipe, especially when it’s smoked. The peppers and onions raw will be fine. I like to sauté them for flavor and carmelization.

It sounds good! Yeah meatloaf and chuck roasts. Everyone seems to get a hankering for one at the same time.

In some countries they put hard boiled eggs in meatloaf . I forgot to add a couple in mine last time. lol.

Yeah the pic quality is good.
