Smoked Kielbasa and Hot Dogs

These look great! I like my hot dogs with a medium grind. Much more important is mixing them enough to get a good texture. I did my last batch with a medium grind and mixed them in my stand mixer with the paddle for 3 minutes at medium. Best texture yet!

I have yet to smoke any of my sausages but with all of my fresh sausage links I find the same to be true.  I don't double grind or fine grind.  I get great mushy texture through a thorough mixing process like you do. 

I actually wish I could get less of a mush texture and more of a grind texture on some of my sausages but I think they key to that is to grind once, mix in seasoning, then 2nd grind mixture and stuff at the same time.  I've gotten sausages here in TX where you can kind of see the grind texture in the sausage and it is amazing over having a compact solid texture via a mush of meat in the cases.

Anyhow, great looking hot dogs and kielbasa Bladeguy!
