Smoked gator

Hi everybody, been smoking now for about 5 years on a electric smoker. I never smoked gator but my son wants me to smoke him some gator. Any helpful hints?

Best advice I can give you is try a little bit before you do all of it. Have some batter and hot oil near by lol.
I have tried it and would rather have it battered and fried others that have tasted it wanted more so it's all in the taste preferences of the person eating it
