Smoked eggs and ham sammie

This might of worked better with tin foil but I ran out and the baking sheets worked fine. Spray them down and you'll have no prob getting off the eggs. Smoked 250 Mesquite wood thats ham on the other side. Threw some swiss on halfway through. Came out with beautiful smoke tinge and tasted awesome. Only thing id correct would be to make the whole dozen eggs and pack of ham. I got one bite out of this experiment after being ransacked by my son and wife. Cheers!
 
very interesting... maybe use a frog mat underneath next time.. keep eggs from sagging in between the racks...

how long on the smoker ?

Hey actually I was worried that was going to be my problem and this lil experiment wouldn't work, but it had no had no sagging at all. It took about 1 1/2 hours, maybe a frog mat if you want to attempt a good runny yolk, I just cooked mine a little firm and it removed quite easily. Have your racks wrapped sprayed and in the smoker before you crack the eggs on them though. i made this mistake and the longest part ended up being me walking and placing it in the smoker with these wiggling eggs.
 
Lol I always push the limits with the smoker. Anything in the fridge cabinet or freezer is fair game!

Thanks! I think ill separate yolk from whites next time. Smoke whites, then add yolk when whites are about ready. Hopefully I get a a nice sunny up smoke style!
 
Long time lurker here, but I decided to join and kick in on this one since I actually have something useful to contribute.I have never tried doing whole eggs with my method, just scrambled, so I am not sure how 1 egg per serving will work. I smoke my ham or bacon till almost done, then put it in a cupcake pan. Pour in a little egg until each cup is a little under half full and smoke till eggs are done. Add cheese, peppers, whatever you like to the egg mix. I have also been know to smoke my biscuits on a separate cooker for the higher heat needed.
 
I was debating using the cupcake method when I try to add yolk in later on the smoke. Next week I think Ill test that out and try them in cupcake and add yolks in later to get them runny see what I come up with. Smoked biscuits? how high how long how tasty?
