I just purchased my Christmas lunch....a 5.2lb farm raised duck. While growing up in Tennessee I hunted my own, but living in Tucson, Arizona it gets kinda difficult. I've looked on here for good ideas to smoke but haven't found too much. Any ideas? I was thinking a creole rub and stuff with apple and while using apple wood. Thanks, and Merry Christmas to you all!
