As an fyi, I take my chucks up to 205 ish and they become very tender. Next time if you are in a hurry just do 265 and wrap after 5 hours, it will be 205 2 -2.5 hours after.... I do them ALL the time like this.

I’m going to have to do that next time. It probed pretty tender but I guess not tender enough - lesson learned.

And thanks - wound up plenty moist with just a little bbq sauce.
