Smoked Chuck and Swimin’ Cluck Street Tacos

So I was all excited to use the copper pot for a mesquite wood smoked chuck roast, but when I went outside it was NOT what I was looking forward to!

So plan “B”.....gonna use the Memphis pellet!

Started off with a nice little chuck roast that I salted then rubbed down with a season paste made from a tbs of Demi, then a dash of garlic, onion, creole, lemon pepper, melted butter and hot water.

Preparing the swimming pool for the chicken breasts with some Italian dressing and just the dry seasonings from a grill mates packet.

The chuck is approaching 160 so getting the braising liquid ready to go....2.5C beef broth. 1/2C red wine, & tbs each Demi & soy.

Once the alcohol is cooked out it is poured over some thick cut onion slices

Dayum those tacos look outstanding! That plated shot is killer! Carousel worthy IMO! I like the idea of the chicken cooking in Italian dressing that's a great idea. Big POINTS!

Thanks Smokin! Doing the chicken this way is about the easiest way on the planet to do shredded chicken with intense flavor. Ie you can drop them on your way to work then have tacos foe

many thanks Chris! The rub added intense flavor! And the braising liquid was like au jus so it was almost like eating a prime rib cap......I can say its

And now the best part........LEFTOVERS!

Just to change things up.....introducing the ultimate grilled burrito plate! Each grilled burrito has cheese, cilantro lime rice, salsa, one each beef/chicken. They are dressed with queso, salsa, green onion, cilantro, and cotjia! There is also a side of meat nachos to help round it out!
