Mrs. Red has a tasty and easy recipe for chicken spaghetti, so we whipped up some with this smoky chicken
Very easy recipe:
One 12 oz. box of angel hair pasta
One 10 oz. can of Ro-tel diced tomatoes (I prefer the "Hot" version made with Habaneros, but the Original with green chilis is OK too)
About 10-12 oz. Velveeta, cubed (we used the white - Queso Blanco - but whatever your favorite is would be good)
About 16-20 oz. (just a guess) of smoked pulled chicken.
Cook the pasta, then combine all ingredients on low heat. Stir until the cheese is fully melted and all ingredients combine.
Served with a nice fresh garden salad and some homemade lemonade:
