I made some delicious gumbo, a while back. so that motivated me to try some jambalaya. As with the gumbo, I had never made it before. I'm not sure how traditional it is but It was darn tasty, I know that!


I smoked a chicken and threw some sausage on towards the end.


Then I sliced the sausage and pulled the chicken.


Then I mixed some spices.


Then I made the roux, It seems difficult but its really not.


Then I added the Holy Trinity (peppers, onion, celery)


Threw in the spice mixture. Made a mess on the stove, but its all good.


Cooked for about 10 minutes.


Then I poured the contents of the skillet into the pot and added 3 1/2 cups of rice.


Then I added the meat.


Then 2 boxes of chicken stock.


I put on the lid and did not touch for 45 minutes.


mmmmmmmmmmmmmm Good!

This may be the best Jambalaya I have ever eaten. It was really spicy, maybe I need to go a little easier on the cayenne next time. Thanks for looking!

OK, I'm just guessing on the measurements, I kind of threw it together. 2 Tbsp. Salt, 1 Tbsp. Onion Powder, 1 Tbsp. Garlic Powder, 2 Tbsp. Black Pepper, 1/2 Tbsp. Cayenne Pepper,1/2 Tbsp. Oregano, 1/2 Tbsp. Thyme, 2 Tbsp. Paprika, and 3 bay leaves.
