Sorry everyone, no pics on the smoker. But I figure most everyone has seen a bird on the smoker. Caught a great sale at a local market for whole chickens @0.56/lb. Bought 8 of them, 6 broken down for dog food in a couple weeks,but what to with the other two...

You all know what forum this is, right? Those overgrown budgies had a hot date with my smoker!

To be transparent, I had no plan on what to do with the birds. But I hadn't had a day off in a while, so what better solution than smoking and drinking some homebrew (well cider, but no need to get technical.)

Smoked two birds with a cherry and a little hickory to 165. Snacked on a wing and thigh, then put em up for the next day.

Half thinking enchiladas, but its been in the high 90s this past weekand it seemed a little menu was needed. Wife suggested laab and sticky rice, and that's exactly what she did today.

Shreded chicken, cilantro, mint, onion, chili, lime and her seasoning blend.

Nice cool meat salad for dinner.

Fellow Nor Cal here. Looks great, like the approach given the weather. High of 97 last Friday, high of 67 w/rain yesterday. One thing I do when smoking whole chickens, if not specific to the days meal, brine them with 5qts water, 1 cup kosher salt, 1/4 cup granulated sugar for 24 hrs. Pull out, rinse, then stuff butter under the skin. Offset smoke at 250, I'm not worried about the skin since not using it, until I get a 170 reading in the thighs. Pull that chicken and let it set aside in the fridge (while enjoying various pieces) overnight. Vacuum seal the next day and put in the freezer. Whenever you want a dish from mexican to asian to italian, season the meat as desired and love the complexity, so easy and simple. This to me is the best way to go with a lot of chicken. I'll do 5 at once.

Looks great and my kind of food. Been playing a lot with multiple Asian counties food. Can you share a recipe for the Seasoning and general proportions you used? Thanks...JJ

Wife made it while so I was at work, so I don't know exact.
Roasted rice powder
Salt
Garlic
Roasted Chili powder (chilies, lemongrass, salt).

Sometimes we cheat and use packaged seasoning like this. I don't recognize this brand,but looks close.
