I smoked some chickens on the new BGE yesterday. I used the deflector plate, put 3 chickens on the grate. Held temps. 365-375*F for the entire cook, they were done in 2 hours and 15 minutes.

I Helped a buddy lay some sod early this morning before the heat got bad. I brought the chicken for lunch. Deboned, diced the chicken first. The sandwiches are fresh guacamole, diced smoked chicken, fresh garden tomato. Nothing else needed. Wow what a sandwich! (extra smoked chicken on the side)

All I can say is WOW! One HELL of a sandwich! Highly recommend it!
 
Man those look good Keith but tell me more about the Baja flavors please. Looking for new bird flavors.

Maybe those out West can answer this more definitively, but my understanding it the Baja sandwich is basically chicken marinated in a citrus/lemon marinade and either grilled or baked. avocado slices with taco seasoning, smokey bacon, Lettuce and tomato...
 
...the guacamole has green tomatoes, avocado, red onion, jalapeno, cilantro, lime juice, cumin, chili powder, coriander powder, salt and a little black pepper.

Thanks Kilo! One of the best smoked chickens I have had. Perfect smoke flavor, juicy, and very tender.I actually pulled then when the breasts were 170 and the legs/thighs were 180-190ish. I wanted to pull them a little sooner, but it did not hurt them at all.

I bet a spackcocked bird would be even better!
 
Looks really good! But then again I've had a craving for a chicken sandwich lately... dang commercials!
