Smoked up some Cajun chicken thighs. These are one of my favorites

Rubbed the thighs with some chef Tony’s hot Cajun rub. Then marinated them with some Crystal Louisiana hot pepper sauce for 5 hours. Then sprinkled a little more Cajun rub on them. Into the smoker with oak and bear mountain gourmet wood pellets. After an hour and a half I sauced them with some more Louisiana hot sauce. Let them cook for another 40 min and pulled them out at 170 degrees.

They turned out really good

They look great. I'm curious how the skin turned out. At those temps, I end up with rubbery skin.

It was kind of in between. Not quite crispy dry but not rubbery either.

This is about how I like my chicken to turn out.
