Trying to do more food prep in the new year so I can eat (somewhat) healthy and not have to worry about cooking after work. Had the idea to smoke a big batch of thighs after I pulled some previously smoked ones from the deep freeze and they were amazing. Combined this with a sale on eye of round at $2.49/lb (nicely trimmed as well) and we had a day of smoking ahead of us.

Started with the thighs at about 250.

Kept them rolling for a couple hours and once they were close I was able to crowd them closer together and add my eye of round.

No finished shots of the thighs but following the quick smoke on the eye it went into the SV for 21 hours at 130. Meat will be frozen and seared for future meals.

Thanks for the comments. Trying to stock up before the big freeze hits.

Bought 3 more roasts to freeze and SV or make dried beef.

Said it a thousand times. But I'm going to say it again. I need to get a SV!

Looks great! I did SV one yesterday...but I was think of laying smoke on next one first. How long and what temp did you lay some smoke on for?

I was running at about 250-275 when I put the eye of the smoker. I left in on for about 45 min - 1 hour before pulling it. The cold pieces I snacked on while slicing had a good smoke flavor but your results may vary.

Wings are my favorite too, but thighs are quickly moving up the list! I did some bone in and they tasted like smoke wings only meatier.
