I needed to cook up some Bison burger I had and wanted something different than the regular burgers. I started seasoning up the burger into meatballs when my wife suggested I put the cheese I recently smoked into them. Great Idea baby.

I smoked them for 90 minutes at 250* with Hickory pellets.

It was hard not to eat them just like they were but I had more to do.

I started by sauteing the veggies then adding the sauce and seasonings then finally the bison meatballs.

With a nice salad made it was a great meal.

Looks really good, wrap with bacon and you have moinks or in this case boinks. I've stuffed them with cheese and slices of jalapeno peppers before. They make an excellent appetizer.
