rub
1/2 cup salt
1 tablespoon black pepper
1 1/2 tbs garlic pwdr
combine in bowl and mix

6 lbs beef ribs (rack)

sprinkle ribs lightly with rub

smoke ribs for 8-10 hours @200-210 degrees F.
meat will tighten up after a short period of time in the smoker and start to feel hard.
it will stay that way for 6-7 hours, then it will get soft very fast. they are done when ya poke em with your finger and feel no resistance.

glaze fully smoked ribs with yer favorite sauce till caramelized 8-10 mins.
if you want.
remove and enjoy..

Great recipe, seems most guys cook to med rare.....gotta go the distance to make em worthwhile!!

I am one of the 4 to 4 1/2 hour guys. I like mine to look like a nice steak, but might have to try a long time version sometime.
