Wanted to try something quick and new this weekend, so read a bit up on a recipe for BBQ Meatballs. Bought the ingredients yesterday, some rolls, and got to smokin' today!
Ran on the WSM 22 for 1.5 hours at ~240 with a chunk of Hickory and Cherry.
Ingredients:
1lb Ground Beef
1lb Ground Pork
1/2lb Bacon
Red Bell Pepper, Garlic, Onion
Plowboys YardBird Rub
FireBug BBQ Sauce
2 eggs
Breadcrumbs
Mixed up all the ingredients and then let them sit in the fridge for about 4 hours. Seasoned them up with a bit more rub prior to throwing them on the WSM.
Very quick smoke, which was the ultimate goal. I intended to smoke them at 225, but the WSM wanted to run at 240, so I chose not to fight it.
Here's the end result:
They're definitely unique. Not too often you think to have BBQ Sauce with a Meatball Sub, but it works really well! I'm sure it'd be great skipping the BBQ Sauce and instead throwing in some marinara as well!
