Hoping to cold smoke some uncooked Basmati this weekend. Cherry wood for about an hour or so on my Smokin-It #1. I say cold smoked, but realistically, whatever temp supports good smoke. Great stuff! First introduced to it in a Persian grocery store.
Sidetracked and never got around to doing this until this past weekend. Ended up using white oak and Zebra Extra Long Grain Basmati. Lightly spritzed the raw rice prior to popping it in the Smokin-It. Gave it roughly 1 hour with very minimal heat. Color and aroma are spot on, reminds me of Khazana Indian smoked rice.
Yes, very happy with it. Subtle smoky goodness. Very similar to commercial varieties. It's great added to regular basmati or jasmine or whatever if you want to tone it down. 1 part smoked to 3 regular or so.
