Smoked Bacon Chicken Sticks

Was hunting around the inter-webs for something interesting to make for the kids and found this recipe on the BBQ Pit Boys site.  It was really easy. Just marinade/rub chicken breasts any way you want, cut into strips, load onto skewer, and wrap in bacon.  Nothing fancy but the kids loved them.  I smoked them for about 3 hours in the mid to low 200's then cranked it up to 280 so the bacon would crisp.

very nice..bbq pit boys huh?..lol. i thought i saw that somewhere... i make their potato bombs all the time.
 
Made these last weekend.  Never saw anything disappear so fast.
I hear you! My kids love them. I got lazy and made them with chicken tenderloins. They were still tasty. One peice of bacon per chicken loin, yummy.

How long did you have them at 280 for?  They look great.  I need to try them.

Once I cranked the heat up I checked them every 15 or 20 minutes. I have a hot side to my smoker and have to shuffle them around a bunch. I smoked them recently and I just kept them in the smoker until my chicken thigh temps were ready to pull, then cranked the temps. Not sure how long it was, but is was less than 3 hours.
