Smoked an eye of round

Not sure why, but I got this eye of round to smoke. Rubbed it fkod with my homemade rub and a little mustard. I smoked with hickory to 130° then wrapped with beef stock in a tin pan to 155°. I sliced it thin and it turned out pretty great. I honestly doubt I'll smoke a cut as lean as this again however.

Looks good.

I have pulled the ones I have done at 125 and sliced super thin for sammiches. It beats the hell out of deli roast beef

that's what great about smoking our own meats, our not so great stuff still beats any store bought

Looks Mighty Tasty, Cowboy!!
I like to make Eye Round in my SV, because it gets so Tender.
However if I want it to be for Thin sliced Deli Style Beef, I Smoke it much like you did here.
