I'll take lead and stick my neck out, so , IMHO I believe the AMNPS would do the job. You'd need to keep it away from the direct heat , I'm sure. However the creosote danger is next to zero and you still have the gasses which cause the change in the color.

Todd's AMNPS permeates Cheese very well in only 3hrs. , I would say  6 or so hrs. in would affect the meat as well.


I am a Stick Burner and cannot attest to the validity here, but in theory it should work.
