Good Evening All,

I’m getting ready to build my first smoke house. I have a question I can’t seem to find searching the internet. While I know you can’t or shouldn’t smoke meat with hemlock could I use hemlock boards to make my smoke house? Thoughts? Concerns?

Yep... Once they are dry after a thorough "break in", and a good layer of smoke applied, no problem... I wouldn't use the smoke house to finish cooking any meat at 300 F... The pitch could off-gas and cause some taste problems... Temps under say 225F, shouldn't cause any problems after a thorough break in....
