I am planning to do some lamb chops this weekend. Gonna do individual chops, like lollipops. I plan on doing a reverse sear, getting some medium-light smoke going when they are in the cool side of the Hasty. Then sear them, with a target of med-rare. What wood goes good with lamb? I just want a hint of smoke flavor. This will be my first time doing lamb of any kind so any info/tips/cautions are much appreciated!!! Thanks in advance
