Due to circumstances I have 7 baby backs that need to be smoked soon! This is the second time I have had to postpone a cook out and I am afraid to hold them any longer. I do not want to let them spoil!!!!
So looks like I need to smoke em and hold em for another day. I usually use the 2 2 1 modified method. Any suggestions as to how far in the process I should take them before holding them to finish up later?
