Hello from The Blue Ridge Mtns. near Roanoke, VA. I am a native Virginian exposed to smoked meats/fish at a young age. Global travel affords multiple ops for sampling smoked goodness from different cultures. I won't go into the boring ego stroking stuff here of where and what I have experienced and eaten. Just Know this nose knows smoke and how to prepare on all levels and am very experienced in the sampling of the results of unreal personal devotion we all have to this ancient way to cook. I have a post now about the aromatic Pinion wood discovered "Out West" and ?? about its safe use. Other than that, be sure to bless the creatures and people that sacrifice their lives and labor to bring this wonderful method and sustenance to all of us to enjoy.

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...
