Slicer problem question.

Hey all,
I have a Berkel slicer borrowed from a catering friend of mine. Works great except when slicing bacon it doesn't want to cut the bottom clean. It kinda balls up underneath the sliding tray. I have to really watch it towards the end of the belly when it does it the worst.
Sorry I don't have pics of what I'm trying to describe. It slices just fine until you get down to @ 2 inches of slab to slice and then starts this.
Is this normal? 1st time with a slicer.

Also, a chilled belly at the beginning of slicing is a warmed belly by the time you get to the end..

Try par-freezing the belly next time, or taking a break about 1/2 to 3/4 the way through and re chilling

I have the same thing happen with my berkel and bacon and jerky. The best results I've gotten is to let the meat freeze solidly, then thaw for a couple hours. The meat will be a "soft freeze" and I still turn 180 degree occasionally.

The other thing I do is reach behind and around underneath the tray and as the meat falls down from being cut, I lightly pull it away from the blade. That helps pull the tail into the blade and keeps it shorter.

Ha, and all this time I thought it was just me and my slicer. I also do the flip thing.
