I'm new to the forum and new to getting whole hogs. Had a processing place do what I thought was uncured bacon, but ended up being just fresh pork side.
I should have just taken the belly whole, but screwed up. What's my best option for turning this to Bacon or recipes?

Just use it like bacon but put pepper on it and salt.. would be good. Maybe you could still smoke some and use it that day or next day in a breakfast and beans.
