I am planning to smoke a bone in turkey breast tomorrow. I had my wife washing and cleaning the turkey while I made the brine. When she finished and I got the turkey out of the sink she had cut all the skin off the turkey. How is this gonnna effect the turkey when I smoke it.

greetings,

I have found that the skin holds the moisture in on a bird. with no skin you have to be careful about drying out the meat. I have found that if you inject it with a unsalted (salt will dry out the meat) injection it will help the meat stay moist. I personally like to use a 1 to 1 ratio of apple juice and water, inject about a quart into the breasts and legs and back meat. also during the smoking process that if you use a spray bottle with the same mixture and keep the meat moist you should be able to still have a nice moist meat. Hope this helps and post the results.

If it came off in one piece then you can put it back on, Maybe attach it with a couple of toothpicks.
