So here you go please sit back and enjoy todays entertainment

LEM  Pepper snack stick 5lb batch


5 lbs of Lem Pepper stick mixed up and ready to be stuffed


into canister of LEM 5lb stuffer


Stuffed into 21mm Mahogany casings


Sat at room temp for about 1hr before going to smoker


Into the fridge smoker for 1hr at 115 then I will bump 10* every hr up to 170 till IT hits 152 or so

Well the beer was cold and the sticks were warm everyone liked them but wiffy (sissy LaLa)

said they were too spicey and  i never even added anything to them - go figure

I'm thinking on finally doing the Bloody Mary Snack sticks from PS Seasonings

next weekend they are calling for cold weather - great for smoking ya?

I love smoking when there's a crisp chill in the air. For some reason the smell of the smoke and the food cooking is more pornounced in the cold. Thanks for the good pics. Bloody Mary sounds like a great idea. I sure could go for one now!
 
Nice looking sticks. I gotta do more this weekend when i get back from Fla.
