Hey y'all.
On Saturday I made an attempt to "re-do some tri-tip after my over cooked madness submission. They were still more medium than my liking but tender and a little smoky. We discovered 3lbs was too much beef for one sitting.
I saw this little trick watching "The Kitchen" with Cinco de mayo recipes. This simple little "trick" for quesadillas piqued mama's interest. I just let her fly. I was Nascar-ing and she jumped in. she cut the leftover tri tip into pencil eraser sized pieces. No pictures but the trick worked well. any protein you like will work. she doesn't take pictures just tells me to come eat. For a tiny Baltimore specimen, she excels in Mexican and Asian cuisine. tonight is tacos, but if he does it again we'll document.

Looks tasty and something Taco Bell would come up with! I dont care for my avocado to be hot but I like every thing else. I'm doing quesadilla tonight too but I do a bottom tortilla, cheese, protien (in tonight's case my homemade chorizo) with onions and jalapenos (do not like bell peppers) more cheese then another tortilla. Dry-fried on a quesadilla skillet, flipped whole (not folded) then cut in to quarters. Wife and I split it, plated with shredded lettuce, sour cream, guac and homemade pico de gallo. Eat like a taco salad...sort of...

Might take pics if I'm in the mood!

Happy May 5th! What the heck, another good reason for drinking! I might break down and make margaritas tonight...only problem with that is the ole-lady will be passed out in her chair a half hour after dinner! (and no, she wont kill me for calling her that, she gets the joke!)

I don't make margaritas often, but when I do, its by the pool, with tacos
