It’s been a while since the Copper Pot had been in service so wanted to do some simple baby backs today and took lots of pics....

Washed them down and pat dry.

Just a simple rub...big bald bbq!

Let the rub settle in a bit while the copper pot was getting warmed up.

Starting a chimney of coals in the side burner.

Heated up to 400 to give the copper pot a nice steam clean!

It’s all settled down to a perfect 225!

I’m doing this smoke with a blend of pecan, apple, & cherry. Just using a chunk of each when needed.

Let them rest for 10 min while the corn was in the pot and Mac was getting roasted. No sauce this time just the rub & bark :-)

Just a plate of simple ribs, picked this morning local corn, & some smoked Gouda bacon Mac. Like a bunch of old friends sitting around a camp fire!

Keeping it simple helps keep focus on the fire....We usually sauce bbr up but the fam said don’t mess up the bark....they were juicy candy in a tasty shell :-)
 
The wife just handed this to me to wake me up from the coma.....now I’m jumping around like a Tasmanian devil for about the next hour then will be pretty chill!

What's in the bowl?

I’m assuming your asking about the round bowl in the middle of the plate.....it was.......

Homemade Mac & Cheese:
1/4C Flour
1/4C Butter
Cook flour & butter till the flour is cooked in.
Wisk in 2C Milk & 1C heavy cream & put on a very low simmer
Once sauce is creamy add:
1C (each) of coarse grated smoked gouda & extra sharp cheddar (Tillamook)
1/2C fine grated parmesan
Season with S&P and some old bay....you can add some red pepper if you want some heat as well.

Next your fav pasta, about 8 to 12 oz dry (boil it al dente while making the sauce).
Add pasta to cheese sauce it is creamy, you want it saucy cause it will be absorbed by the pasta
Put in oven safe dish (individual size or family size). Add some for cheese blend on top and any other goodies you want, ie sausage, bacon, chicken…..then seasoned bread crumbs if desired. The sauce and pasta are the canvas create individual tastes….

Then put in the oven at 400ish to melt the cheese and brown the crumbs (about 6 to 10 min). Added chopped green onion if desired.
 
LOL....didn’t you read the label they are pit-master preferred!!!

Smithfield pork is Smithfield pork :-) our local Costco bbr are Smithfield....but in a three pack......those 3 packs mean eat way too much!!!!!

Lived on the wet coast (Seattle) for many years. Happy to see Tillamook cheese in local Costco.

Yea, my wife and have been going to the Tillamook cheese factory before it was a “thing”. Their ice cream was a little cart with only 7 flavors. At that time they would hand mix up the cone batter and waffle them while you waited....now the factory......just wow, it’s like the mall of America!
