It’s been a while since the Copper Pot had been in service so wanted to do some simple baby backs today and took lots of pics....
Washed them down and pat dry.
Just a simple rub...big bald bbq!
Let the rub settle in a bit while the copper pot was getting warmed up.
Starting a chimney of coals in the side burner.
Heated up to 400 to give the copper pot a nice steam clean!
It’s all settled down to a perfect 225!
In they go for a simple smoke
The copper pot is happy!
I’m doing this smoke with a blend of pecan, apple, & cherry. Just using a chunk of each when needed.
@ 4.25 hours
The bend test says it’s time!
Test two
Let them rest for 10 min while the corn was in the pot and Mac was getting roasted. No sauce this time just the rub & bark :-)
Just a plate of simple ribs, picked this morning local corn, & some smoked Gouda bacon Mac. Like a bunch of old friends sitting around a camp fire!
Pork belly on a stick money....as the boy calls it.
Mac money.
I’m now passed out on the couch in a meat coma.....
