Just the 2 of us here tonight (unusual for around here) and was looking for something simple, quick, and good tasting and shrimp scampi fit the bill.

Took a quart of shrimp out of the freezer and chopped up some garlic and shallots. I guess the lighting on my island makes them look orange...

Some EVOO and a couple TBS of butter in a skillet on medium heat and in goes the garlic and shallots...

Sauté for about a minute and then add a cup of Chardonnay or any white wine you like...

Reduce to about half and add in the shrimp. Cook until the shrimp turn pink...

No pics, but I had a pot of water boiling and some tri-colored rotini cooking. That was mixed into the skillet. Had some petite sweet peas cooked in butter. A little chopped parsley for garnish, shredded parmesan, a good squeeze of fresh lemon, and it's time to eat...

This was so simple, easy, and tasted great...
 
Hubba Hubba, me likes shrimp scampi, and that plate looks like more already. Nice work.
 
Nice! I need to double check my garage freezer, I think I have a pound of jumbo's out there. Think I'll make scampi for valentines day/our anniversary. No, I dont get out of taking her out to dinner, but she's practical, we'll go out to a nice place the week after...the restaurants will all be packed next Saturday. Not a fan of the crowds...
 
I don't get to eat near enough shrimp and after looking at that plate, I'm really Jones'n for some now. Well done Charles, it looks fantastic!

Looks delicious! Simple, quick and flavorful, shrimp scampi with pasta, peas, parsley, parmesan, and lemon is a perfect meal for two.
