hey everyone looking for a little advice. Putting short ribs on my masterbuilt tomorrow. Using a rub of S&P onion powder and paprika

I’m not sure what temperature 250? 275?
Also is there one wood that goes better with beef than another?
I’m not planning on wrapping them. Think I like the Texas style
Any advice is helpful! Thanks

250 to 275* is fine. I cook them like I would a brisket. Hickory is my choice for wood. Good luck and let us know how it turns out.

250 to 275* is fine, for wood I prefer hickory. If you look in the meatloaf link in my signature I did a few beef ribs along with the meatloaf. Good luck and let us know how it turns out.
