Hey gang.

My name is Mark and right this minute i'm doing an empty test run on my Brinkmann Dual with fire box.  

I'm 34 and 11/12th's  :)  and been married for a little more than a week.  The father-n-law bought me what I fondly refer to as the "Fertility Grill"

I was due for a new one and wanted to get into more than just gas grilling.  I've dabbled a little bit using my grill to lightly smoke ribs.

Couple hours at 225 in the oven rubbed and sealed to steam.

Then 2.5 - 3 hours on the gas grill with tray of chips.  That only works so well for so long. 

So I added the firebox to the brinkmann and away I go.

I know this combo grill gets some pretty bad reviews but for the month I've had it I've been really happy with both sides of it.

I've had it at 260-280 degrees pretty steady for the last 3 hours running cowboy brand lump.  started with a chimney and a half and have added 2 handfuls since.  It's empty of course.  Thrown some large soaked Hickory on there to see how it affects the heat.  Quite happy with how well the intake has controlled the heat. 

I plan to do a couple of small whole birds on Saturday.  I'm looking forward to it.

Not gonna get to fancy on the first run..

Welcome to SMF!  That's a fine looking rig there.  LOL at the "Fertility Grill" designation!  I love my SFB.  I call it "Grillestate."  (I added the upright portion because I could.  It works great for extra space and I can also keep it nice and low for cheese, jerky, etc.)



Check out the mods for SFB's on this site -- I've done most of them and they work great -- better temp control, even heating throughout the smoke chamber, etc.

Welcome and enjoy the forum.   Chicken is good this way.  IF it is not infused with "saline solution" consider brinning it.  I use mesquite, but I know a lot of folks here don't like it.  If you use it , as with all smoke, keep it thin and blue.
 
My husband refers to the SMF as "The Meat People"  As in, "Are you sure it's supposed to look like that? Did you ask The Meat People?"

Welcome aboard, Falcon!  Yeah... that's just some thing you'll get used to.  Wait until you have a crowd and start dragging out the camera... don't let it bother you!  I caught hell from everyone for a while (at least a year).. now they actually step and say "Hey, this would be a good shot"!

 Have to agree w/ Walle,

 At first my wife thought i was nuts , Taking pics , probing this and measuring that.

 Don't worry they fall in line pretty quick. 2 days after the s.La. gathering SHE decided i need to get a 250R trailer pit.

Needless to say, I fully agreed w/ her.
 
Welcome. My wife Finlay stopped making comments about the picture taking. Now she just rolls her eyes and gets out of the way.

First off Welcome Mark to SMF.  Well you might as well get used to her making fun of you because it's gonna get worst long before it gets better. Now if you think she makes fun of you just for joining wait till you start taking pictures of your food. No you can't eat any of that I have to take pictures first. Then she will be making fun of you. But you will get used to it. You'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.

Welcome. This is a very encouraging group of people. I'm new to this thing, but as richoso1 says, "It's all good."

My daughter (the vegan) says she's going to make me wear the patch to break my addiction to smoking.

DW (da wife) laughed at the picture taking, too, until she saw what a post here with "QView" looks like. When she saw ours, she felt pretty good about it.

And congrats on the marriage and the smoker.
 
63, Do Not Forget the #1 rule about smokin' meat. The #1 rule is a beer should be in hand or very close to you at all times when smokin', ya never know if the wood will get out of control. Congats on the new wifey.

Just have your wife read of few of Squirrels "epic" posts.... she will think you are a calm, collected, and insitefull coneseur of smoking after that..... LOL.

Wow, wish I had gotten something like that for a wedding gift!   Around my house it's "smoker porn" according to my husband, and yep, he finds the photo taking, well, let's say amusing?   Best wishes to you and your wife, sounds like you've gained a pretty nice family, as well, hope you have a lot of fun feeding them in the future!
