Seven Pepper Snack Sticks

Sticks look good. Thats a long time for them to be in the smoker. MES is bad for off temps. 
If only the MES was as accurate as my Memphis Elite

Just curious about the 7 pepper sticks.  Are they spicy?  I've been trying to get a HOT recipe, and can't seem to get there.  The latest recipe I use, I doubled the amount of cayenne, crushed red pepper flakes, and hot sauce, and it didn't seem to make a difference.  I'm looking for a recipe that has some real kick to it.  Was hoping this 7 pepper might be what I'm looking for.

These are not hot to me at all. My coworker though they were but as my 5 year old loves them I assume they are not hot.  :)       I read somewhere about a Sriracha recipe that had some tang to it. Will see if I can find it.
 
Okay, thanks for letting me know.  I'm looking for something that you need to have a beer with if you know what I mean.  Something with a definite kick.  I know I could just start adding more pepper, but at the same time, I don't want to go overkill.  I guess next time I'll need to try a couple more patty tests.  I forgot to this time, until I got done stuffing the casings.  Kinda late at that point.  

I think the siracha is a good idea.  Also could use more hot sauce.  Maybe do half water half hot sauce.  So 2.5 oz water, 2.5 oz hot sauce in a 5 lb batch.  

If anyone else there has any suggestions, please let me know.

These turned out great again.  This is by far my go to flavor for snack sticks so far.
Those look dandy,,,, I get mine from PS seasonings and I handed them out to guys at work yesterday and mine were very very warm as all the guys said the same???? 

Here is my freezer after vac packing last night - 50lbs of different flavors in the last two weekends
