Greetings Benny. We are gonna need way more detail to answer your inquiry. What kind of jerky? With or without Cure #1? Are you trying to Smoke it or just Dehydrate the meat?
In general, get your meat to 160°F, then you can finish the process at any temp between Ambient and 150, depending on the amount of time you have to invest. 130 to 140°F is pretty popular...JJ
