So I found a nice Pork Tenderloin on sale for a little over $9.00. I bought it and then mixed it with Brisket Trim and Brisket fat. The total weight of the tenderloin, brisket and fat was 3477 grams. I shot for a 30% fat ratio and ran it thru the grinder large die first then a second grind thru the small die. I had bought a block of smoked gouda cheese that weighed 680 grams so I weighed the meat to get it to a 20% cheese level. I mixed and then added the cubed up gouda last and used natural hog casing. I was in the mood for both hot dog and sausage so I made a sausidogs I used my hot dog recipe and added red pepper flakes and made them the size of sausages. The block of smoked gouda was about $5. They are incredible, Gouda makes a fine sausage, creamy and delicious. The meat and cheese yielded 9 pounds of sausage. I use some beef fat I rendered from the brisket I cooked last Friday to make beef fat tortillas and its a winner winner sausidog diner. Brisket street tacos and sausidog tacos with carolina gold bbq sauce. Dont have a tortilla press so I do the best I can.

Sausidogs
3477Grams of Pork loin, Brisket trim and Brisket fat
70g kosher salt 2%
9g pink curing .25% salt
22g mustard powder .62%
22 grams paprika .62%
15 grams .41% garlic
7 g coriander .2%
10 grams majorum .29%
14g white pepper .41%
7 grams mace .2%
6 grams celery seed .16%
For heat
11 gams red pepper flakes .3%
348 g water 10%
129 grams milk powder 3.7%
Cheese 20% 680 grams


Beef fat tortillas

TORTILLA RECIPE
450g Bread Flour
15g Kosher Salt
12g Baking Powder
130g Beef Tallow
250g Water

Mix ingredients let sit for 30 minutes in a lightly greased bowl
Make 50-60 grams balls and Cover with damp kitchen towel and let rest for 15-20 minutes.
Press and cook

Cheese IN the sausage isn’t really my thing, but looks like awesome work and great sausage for someone whose bell that rings.

Love the beef fat tortilla. Totally up my alley for something to try.
