Going into work and staying over to work on my smoker welding in my baffle and plate and making it into a reverse flow smoker. Here are some ideas I got going remember the grates will be solid metal after tomorrow. Should I make the water pan hole or not ? Or just make it all the way across to leave me a gap about 4 1/2" so the heat and smoke can travel through?
