Seasoning my MES 30. First timer here. Easy ? hopefully

Sorry if this is a dumb question in advance. I’m seasoning my MES 30 right now and followed the instructions set to 275 for 3 hours etc. I’m about a half hour in and my temp reads 290. Is this okay? I was under the impression it would max out at 275.

Don't sweat small swings in the temp. It's just the heating element cycling. Also don't put allot of stock in the accuracy of the MES therm. Most are way off.

I believe that is normal. The temp control is slow to respond as it does not anticipate reaching the goal temp and overshoots. It settles down after first 30 min. Do some research on this site, lots of info.
 
Thanks for the reply! Right after I typed out the message I checked again and the temp had regulated back to 275° and has been holding pretty steady ever since. I think I should be good to go. Ordered a Maverick dual probe but don’t have it yet so my first time is going to be done periodically checking with a meat thermometer and winging the ambient temp. Thanks again.
 
I have a MES 30 and speaking from experience the only thing the factory thermo is good for is a chuckle now and then. Invest in a good thermo and you won't regret it.

Box stock, my MES 30 ran 310° at a 275° setting.
Like they said, accuracy at this price point is a joke.
Just run your break in as described in the literature.
I spent several days playing with my new smoker just figuring things out, and seasoning it.
And nothing sez you can't season it multiple times. So I did. ;)
